After attending the University of British Columbia, she made her way to Le Cordon Bleu culinary school in San Francisco, and began cooking for both Western and Thai restaurants. I have been eating Thai food for about 40 years but I never tried cooking it before this year. I tried a few recipes I found online with varying degrees of success. When I tripped over her videos on YouTube, I decided to try the book. Unlike most cook books, she begins by describing Thai food culture in general and discusses the most common ingredients in Thai food. She also breaks down the ingredients in her recipes by their function and suggests substitutions if you can't find all the authentic ingredients. For example, when is the last time you saw Thai celery in the supermarket? The recipes are broken down into groups such as curries and she describes the basic cooking procedures for each group. The recipes themselves are great and include many famous dishes as well as some that I have never seen in any Thai restaurant. I'm really looking forward to cooking each of them. The only problem is that the nearest Thai grocery is probably in Seattle and that's about an hour and a half drive. So, when I do make that trip, I'll stock up on what I can freeze. Oh, that's another thing I liked about the book. She tells you which ingredients you can freeze as well as telling you other forms of the ingredient that are available and which one(s) to substitute for fresh ingredients.For example, in some dishes, you can substitute dried Thai chili for fresh ones.I might also try using a Habanero chili for several Thai chili sometime.

The Only Thai Cookbook You Will Need

I have watched all of Pailin's videos over the years. Yes, they are long but extremely informative. You will learn so much not only about Thai recipes but about Thai culture. I love the fact that she doesn't take many shortcuts. This cookbook is a great extension to her videos. All the recipes are well organized and there are tons of high quality photos. If you are serious about cooking authentic Thai food in North America, this is the cookbook for you. FYI if you are looking for excellent quality short Thai cooking videos check out Siam Simmers on YouTube.
